J is for Jacket Potato

I am a fan of a jacket potato, in fact when I decided to share my photograph for my ABC contribution I had to make one - in this case tuna, extra light mayonnaise, spring onion and cucumber. Jacket potatoes are a great way to use up food - I have many favourites but an indulgence would always be just butter!

Whilst I often microwave the potatoes nothing tastes anything like the crispy skin of an oven cooked one.

What are your favourite fillings?

We have had some lovely weather of late and have had a couple of expeditions on the motorbike, as well as walks on the beach and catching up on garden jobs. The henhouse has had a spring clean - today I noticed Bev lurking around the door - she is laying again, only moments after I captured this photo a blue egg appeared. Eva sits on the shelf to lay hers, whilst Mabel and Olwyn choose the corner of the shed, so we are up to full production now.

The sky is taking on a distinct dark grey colour which could bring the rain we are to expect - so this means the next DIY task will be the de-cluttering of bedroom 2 ready for re-plastering and decorating. Ideal job for bad weather day!

  1. So glad for you that the girls are laying again! Their eggs are out of this world delicious! I do love a jacket potato and had never heard of them until my first visit to the UK. We have baked potatoes but usually just use butter, sour cream, chives, and bacon bits for toppings. But I do like the idea of something like steamed broccoli covered with melted cheese.

  2. Favourite filling? The ONLY filling in my humble opinion is coarse sea salt ,black pepper and olive oil.

  4. You just can't beat a good honest Jacket Spud. I like tuna and mayo and coronation chicken best, but baked beans and cheese or leftover chilli is good too. Good luck with the decluttering.

  5. I make them in the slo cooker sometimes, if I am out for the day, but then I really prefer to finish them off in the oven as love crispy skins. I've been known to grill them to crisp them up LOL
Yesterday I went out with my young'uns and had a filling of goats cheese and spring onion. I will eat them with almost anything, as you say, a great way to use up bits if food, just whip up a jacket filling.
Years ago there used to be a jar of stuff sold in the supermarkets, called "dinner jackets", full of fat and sugar no doubt, but very tasty.

  11. I just call them Baked potatoes but no matter the name they are delicious.
I like them with butter, a little onion and maybe some sour cream. Add some meat or chili beans and you have a meal all in one. Yummmm!

  13. Love a jacket, well all potatoes really. I usually microwave and then finish off in the oven for 10 or 15 minutes for crispness. Or for pure lunchtime laziness nip around the corner to the Baguette-me-not sandwich shop for one of theirs.
