Today is Pancake Tuesday...............these are heavenly and healthy!
Whisk 1 egg white till stiff, add sweetener. Stir 1 vanilla essence drop into yolk & fold into egg white. Fry light - cook till set then flip over. Serve with raspberries + spoonful of fat free greek yoghurt + 1 tablespoon water to thin out yoghurt! LUSH!

ReplyDeleteWow, that sounds delish, must try that recipe. I did have some lovely frozen raspberries from the summer but had a freezer collapse and meltdown so had to do some frantic jam making.
