Inspiration!

Many people, including myself have made a New Year’s resolution to lose weight. I attend Slimming World on a Wednesday night and it was there I met Frances. As you can see from the photograph on the left Frances is now very fit as opposed to how she was only a few years ago. (Far left in the photograph). Frances has lost a staggering 10 stone!

Frances like me, enjoys cooking so I am going to share a recipe each week which follows Slimming World guidelines. This week I am using my own Leek & Potato Soup recipe.

4 leeks

6 potatoes

2 vegetable stock cubes

2 laughing cow cheese spread triangles (purple wrappers are the very low fat ones)

Seasoning

Low fat natural yoghurt for stirring in when cooked

 

Steam vegetables & when cooked blitz to required consistency ie some may like more lumps/texture than others. Pour  1 pint of boiling water into a jug, crumble in stock cubes and add cheese triangles and whisk until all is a liquid. Add to leek and potato mixture in pan and stir until thick. Season add yoghurt and serve.

 

I enjoy Slimming World – we have a great laugh! Last week I was nominated to be the person who greets new members as they enter class! Wonder why? lol!

  5. As far as I am concerned SW is the only plan to follow, so far I have lost 2.5 stone only gained 1lb over Crimbo and New Year!!!!

  6. Sounds similar to Weight Watchers. And the soup looks wonderful.

    Gives me fresh hope as I don't have anything near that amount to lose.

  13. Good morning Mrs Nesbitt, and thanks for passing by and dropping in to leave a comment on my blog - always nice to see a new face as t'were!
    Oh I sometimes miss the moors of the county of my birth... lived up there for a while in the seventies and eighties, over in the East Riding as opposed to the West Riding where I was born. Now I live in flatness, but it has such a beauty of its own, completely different to the moors and dales of course, but nonetheless beautiful.

  19. Many thanks for stopping by - I will have a go at your soup. I did Slimmers world really succesfully after I had my kids, but I joined last year and didnt get inspired at all - having said that, the leader was no inspirationa at all. She was the largest there by far and obviously put weight on week by week, whilst telling ladies off - even when they had lost weight!!! Your leader looks wonderful, and does look inspirational. I'd love to know your contact for cards - we usually visit Whitby a couple of times a year. Its a lovely place. xxxx

    Thanks for dropping by my blog. My hubby works in Pontefract, didn't the snow come down hard and fast last Friday?
    We love Whitby and spent a few days there last Summer as Twiglet wanted to stay at a B & B for the first time, so we stayed at a lovely farmhouse.
    We spend a lot of time at Filey and have done since we were children - we are blessed to live in Yorkshire aren't we?

  24. I have just treated myself to a blender for soups so I will try this recipe - I like leek and potato soup. Good luck with the weight loss - just what I should be doing!
