K is for Kidney Beans.

I nearly had to reach for the dictionary for inspiration today - but there was my answer literally under my nose!

As I mentioned a couple of ays ago, I am on a diet! A strange time of the year for such a drastic measure you may think but as the colder months approach I will have to start wearing my winter biking trousers and if I remember from last time they were starting to feel tight - so I am operating a proactive approach rather than a reactive one. I am following Slimming World as I find this suits me. Basically I can have vegetarian days (green) which I quite like as well as meat inclusion days (red).

We do not have a great variety of local shops so I have to choose ingredients which I can find on our doorstep - kidney beans for an example! What you see above is what I had for breakfast this morning. I first make up my kidney bean mixture - I blitz half a can of tinned tomatoes + 2 level teaspoons of curry powder + 1 level teaspoon of chilli powder. Next I add one tin of kidney beans and blitz quickly so it is still quite crunchy and not too mushy. This mixture can then be added to a baked potato, spread on crispbreads with fat free cottage cheese or in the case above - added to scrambled egg! Absolutely delicious!

Last week I lost 2.5 lbs and will know how successful I have been this week when I get weighed on Wednesday evening - so I will update then.

I promise I wont go on - nothing worse but from time to time i will share any good recipes and good news!

  1. Good luck with the diet. I once lost weight rather faster than I should after eating kidney beans. They weren't cooked properly and poisoned me! Apparently the stuff they contain is really very nasty if you don't boil it away in a nice open pan. My host didn't know that and I ended up in hospital overnight. I assume he did too but I didn't really care at the time - I was too ill!

    Thing is I can't bear to eat them now. So I use chick peas instead. They contain the same stuff but it doesn't bother me. :)

  4. Great 2.5 pounds is right on target. Keep up the wonderful diet. I love Kidney beans, especially in Chili, which we had two weeks ago. The scrambled eggs with that topping sounds delicious.

  6. I would never have thought to add them to scrambled eggs, but what a good idea! I'm struggling with weight coming back on right now, but I know it's stress. You'll do fine. :D

  8. Hmm I would like that, I love veggie food. I used to like those Heinz Beanz when I did green days, heated up with a handful of quorn and placed on a bed of rice, instant chilli!

    I make a bowl full each morning and basically once I have had my breakfast i adapt it for the rest of the day - for dinner tonight I am having it in a jacket potato with laughing cow cheese - all allowed in a green day! I love it!

  11. I love kidney beans, too, and this does sound like a great recipe! I'm very fortunate that weight is not a problem for me, but I do try to eat healthily!   15. Well done on the weight loss! I'm a vegan so eat a lot of pulses. I love kidney beans, but my real favourite is chick peas - I could eat them straight from the tin, and frequently do :O)

  17. Mr. G is crazy about Chili con Carne. So I always prepare a big pot with at least 5 cans of Kidney beans. I put them in one portion pots in the deepfreeze and each time I go out with friends or I am on holidays or whatever, he gets his Chili con Carne, is happy and I am in peace !

    Kidney beans with curry sounds great and I add refried black beans to scrambled eggs anytime I can. Try black beans cooked with onions and bay leaves, then add more onions and garlic and/or curry, cumin and oregano.

  31. Oh Denise, how could you eat kidney beans for breakfast, or at any other time of the day...I am totally allergic to them and would be in the A and E ward if I ate them!
    All the more reason not to diet, From one who had crumpets and honey for breakfast and half a Margueritta pizza for lunch!
    Are going to Weight Watchers to do this?

  33. I love pulses but kidney beans are not top of my list prefer them mixed with others beans. Sounds like a breakfast that would set you up for the rest of the day. Well done with the pounds, and may you loose more.
    I will have to send you my easy Channa Batata Curry (Chick Peas and Potatoes) recipe which would be good for your green days.

  38. Wow, that looks good, actually. I never would've thought it was made with kidney beans -- I thought it was some type of fruit cobbler, waiting for dollops of ice cream. Whoops, sorry for saying ice cream.

    Good luck on the diet, I'm on one too. Switching to fat-free milk has made a big difference.

  42. I am a semi vegetarian (though my family get cross with me for saying that ....... as I eat chicken and fish!)
    They say *CHICKEN & FISH are NOT vegetables!*
    The beans do look nice served that way.
