N is for New Poatoes!

New Potato Salad



A few weeks ago my Sister in Law gave me a small bottle of olive oil containing chillis and garlic. It has become one of my favourite ingrediants. To make a very simple dish to accompany left over meat or chicken, or to go with a quiche just cook the new potatoes and stir in herbs or vegetables of your choice.

The one above I added chopped chives but it is equally lovely with chopped spring onions, red onions or dried tomatoes! It is such a refreshing change from the conventional potato saald made with mayonaise.

Supposidly we are approaching the warmer part of the year so instead of the root mashes/roast potatoes to go with a roast I will use this together with other vegetables, all in the same dish - so easy to prepare - I just steam all the vegetables, place in a large serving dish and add the olive oil!

As I write this I must admit I am feeling inspired to experiment with a variety of herbs/spices to add to the olive oil!

  9. Mmmm! New potatoes. I love them with lots of butter. Come to think of it, I like most things with lots of butter. We can buy small red potatoes here, and they're almost as good. Very sweet. If you go to my blog, you will hardly be surprised at my choice of subject!

  10. I love using olive oil....I get mine at Trader Joe's. I especially like to drizzle it over fresh asparagus with a little garlic salt and micro for a couple of minutes....Yummmmm.

  13. The first potatoes and olive oil will be so extravagant ... this is the pure enjoyment! We have now already the first own asparagus - for me there is nothing more precious.

  14. They do look delicious!! I am very fond of new potatoes, but prefer them with just butter and maybe a few Italian herbs. No chilli for me! I also like warm new potatoes with salad. YUM!

  16. Oh, we just love herbed oils and herbed vinegars here. We grow our own herbs and make up batches of different mixes. And herbed butter...YUM!

  18. New potatoes are one of our favorites! Cut up and mixed with onion, garlic and other seasonings, brushed with butter and baked...heaven.

  19. I use this kind of dish a lot Denise - I find the problem is finding really tasty new potatoes these days.
    Today I tried a salad of butter beans, sliced red onion, chopped parsley and a tin of tuna in oil - it was delicious.

  20. New potatoes, they look wonderfully waxy, gorgeous. I look forward to the Jersey Royals, although like The Weaver sometimes not as tasty as they used to be. I'm feeling hungry now.
